What's Cooking Wednesday: Garlic Scape Pesto

Garlic scapes. They only grow a short period of the early summer but I love getting my hands on them to make this delicious and EASY pesto. 

Garlic Scape Pesto

12-15 garlic scapes
1/2 cup olive oil
1/3 cup parmesan cheese
1/3 cup of almonds (pine nuts are better but SO expensive and I didn't have any)
1 TBSP lemon juice
salt and pepper

Put it all in a blender or food processor and let it mix! That's it. 

Put it on sandwiches, in pasta, in eggs or an omelette, or even add it to a cheese board!
