a block of feta (do NOT use crumbles)
a pack of cherry or baby tomatoes
GOOD olive oil
salt and pepper
honey
garlic
Line your pan with parchment paper or spray with Pam.
Place your feta in the center.
In a bowl, toss the tomatoes with 3-4 tablespoons of GOOD olive oil, a few tablespoons of minced or thinly sliced garlic, and a good amount of salt and pepper (to your liking). Pour tomatoes and juices around the feta in the pan. Drizzle the feta with some honey.
Bake at 400 for 30 minutes then raise the temp to 450 and bake another 10.
I served it with a loaf of crusty bread and the next day we had it for breakfast with eggs on fresh biscuits.
