What's Cooking Wednesday: BBQ Nachos



When I posted a pic of this on my Instagram stories, I was flooded (no exaggeration there either) with requests for the recipe. And when I say it was easy, I'm not lying. So, here you go, the easiest recipe I think I've made in a long time. 

BBQ Sheet Pan Nachos 

Tortilla chips 
1 lb Ground beef 
Barbeque sauce
Tomato sauce
Brown sugar 
Corn salsa (Trader Joe's brand)
Cilantro 
Limes
Sour cream 
Shredded cheese (I had Trader Joe's bagged Mexican cheese)

Preheat over to 450.

Line a sheet pan with tin foil and spray it with Pam. Scatter tortilla chips all over it. 

In a nonsitck pan, brown ground beef, breaking it up as you go. When it's almost totally cooked, add in 1 cup of barbeque sauce, 1/2 cup of tomato sauce, and a heaping tablespoon of brown sugar. Stir until mixed and thickened, roughly 5 minutes. 

Spread ground beef all over the tortilla chips. Scatter Trader Joe's corn salsa all over it. Sprinkle shredded cheese over it. Then put the sheet pan in the oven for 5-7 minutes or until the cheese melts and bubbles. 

Squeeze lime all over it and top with dollups of sour cream.
