What's Cooking Wednesday: Chicken Chili

When I say easy, this is EASY. You do need a crockpot, just FYI. 

Spray crockpot with Pam to avoid sticking (or use a liner).

Put in your chicken. I used a package of boneless skinless large chicken breasts. Sprinkle with cumin, Trader Joe's chili lime seasoning, Trader Joe's garlic salt, and pepper. 


Pour in one can of cannelini beans (drained), one can of fire roasted tomatoes (drained), half a jar of Trader Joe's corn salsa, one can of baked beans, some chopped onions, and half a jar of tomatillo sauce. 

Then dump in a box of chicken stock. Put the lid on, turn to low, and cook about 6ish hours, up to 8 if needed. 


When ready, pull the breasts out and shred with two forks then dump the chicken meat back in and give it a stir. 

I serve mine with a fresh squeeze of lime, avocado, shredded cheese, and a dollop of sour cream. 

Seriously, super easy. And GREAT for chilly nights. Also tastes just as great the next day for leftovers. 


Now, it might not be the most appetizing and beautiful plate, but y'all, it is SO dang good.
